Javier Rodriguez was born and raised in Santiago del Estero, the very north part of Argentina.
At the age of 19, he started travelling the world working and staging in some of the most renowned restaurants in Australia (Tetsuya s), Denmark (Noma 2, michelin star), Norway (Maaemo, 3 michelin star), Perú (La Gloria), Singapore (Restaurant André, 2 michelin star), and England (Viajante, 1 michelin star).
In 2015, at the age of 32, Javier Decided to go back to his beloved Argentina, and open El Papagayo in Cordoba, Argentina, where together with a great team, is offering one of the most exiting culinary experiences in the country.
During this period of time, Javier founded El Papagayo Hospitality, a culinary consultancy office who provides services to interesting hotels and restaurant in countries such as England, Luxembourg, Singapore, Bangkok, Argentina and Chile among others.
As Javier remarks, El Papagayo is a Aesthetic experience, based in 3 fundamental pillars: -- Food and Service: The daily changing tasting menu is totally based on seasonal produce coming from Small local producers. El Papagayo also counts with a passionate service team who provides a warm and high standard hospitality to all of our guests.
- Design: Singapore Based Bedmar & Shi architects made a excelent job using wisely the 2,3 metres wide the restaurant has. El Papagayo was named by Dwell Magazine as one of the 10 best restaurant designs in the world).
- Art: we work closely with local fantastic emerging local artists, and choose delicate pieces of art that adorns the space.
All this hard work lead to El Papagayo been voted best restaurant in 2015 and 2017.
In October 2017 Javier opened Standard 69, a simple but high standard restaurant who is looking for new openings in Santiago de Chile and Sao Paulo in 2018.
