The Japanese Kaz Okochi is one Washington’s top sushi chefs and the owner of the highly acclaimed Kaz, Sushi Bistro. Kaz was born in Japan but moved to the States as a young man to study art. Along with his studies Kaz worked at a restaurant only to realise that he rather wanted to become a chef and moved back to Japan to learn to become a sushi master.
“Sushi is not just sushi as we see it, it’s a lot of knowledge and work behind every bite of sushi...” Kaz explaines.
